Personally, I like to treat quinoa like rice. I take veggies, chicken, and quinoa and mix it all together.

Does anybody have problems with quinoa? I love it so much, yet, I get really bloated afterwards. Although I do eat it with veggies, usually zucchini,carrots mixed in. It is frustrating when the healthy foods cause problems. gahhh!!

It is a whole grain but it is a seed like barley. It contains some insoluble fiber. I cannot eat it either.

"See how do you do with brown rice, oatmeal, buckwheat (soba) noodles, corn meal (polenta), quinoa, and barley. These tend to be the best tolerated whole grains for IBS. Try adding in small amounts of well-cooked and pureed beans or lentils as soup or dip additions to your diet. "
Quinoa gives me the same symptoms and discomfort.
Did you peel the carrots and zucchini?
Were the veggies completely cooked or were they still crunchy?

It's my go-to grain. I love it! I use it in all kinds of dishes along with just cooking it for breakfast. Sorry to hear it gives you problems. Are you sure it's the quinoa, and not some of the veggies? How can you be sure the problem is the quinoa, if you are not isolating it?
