Heather's chocolate cheesecake brownies

I almost forgot to mention, I made these to take to my family Valentine's Day gathering last weekend, and they were a big hit! Even after I admitted they were made with tofu everyone snatched them up. I cut them into the shapes of hearts with cookie cutters (as Heather suggested ), and I'm still enjoying the scraps that were leftover! I would highly recommend these... they have a really light cheesecakey texture, and they're great with Tofutti on top.

Wow, that sounds really, really good. I have to try it!

I wonder what the fat content is? Would you know?

I don't know exactly, but I would imagine it's very low. The tofu and soy yogurt are pretty low fat, and other than that your only significant amount of fat would come from the 1 Tbsp oil!

Welcome to the board! I've found it to be very helpful! To be honest I have no clue what that is!! What do you need it for? I don't use a lot of the tech extras. sorry. I hope you are feeling well and feel free to post questions etc. The recipe board is great!

Hi Liline, and welcome to the boards! The instant UBB codes are just a way to add some extras into your messages, like links to web pages and pictures. They also allow you to add in bold or italicized text. They have some other features that I've never even used, like letting you give a poll (e.g. how many people prefer oranges? how many prefer apples?). In all, you probably won't even need to use them very much, they're just an extra thing to play around with!

Why can't I substitute Tofutti's "Better Than Cream Cheese" for the soy yogurt? Or use all tofu instead of the soy yogurt?

I don't see why you couldn't, Bev. I'm assuming Heather just uses the soy yogurt because it's lower in fat. I bet it would be delish with the tofutti though!

and if you use all tofu, it won't have the "tang" that the soy yogurt/soy cream cheese lends.

I'm hot to make these. I have the Tofutti "cream" cheese and the silken tofu, but I can't get the soy yogurt. Rats. I'm gonna give 'em a try using the Tofutti in place of the yogurt, and I'll let you know how they come out. I guess they'll be higher in fat, eh? So I'll have to keep my portion to, oh, say, half dozen?

Hi- I've played around with lots of versions of the "cream cheese" part of these brownies depending on what I have in the fridge. I'd say as long as you keep the high fat tofutti cream cheese to no more than 1/4 cup, and use silken tofu for the balance, it should be nice and safe and really tasty. You can actually drain the silken tofu overnight if you want - that will make the cream cheese filling denser.
