Fresh Basil Omelet with Sundried Tomatoes
Think you can't eat omelets? Well, you can. The secret is to make them with just egg whites and no yolks, and to cook them without oil in a non-stick frying pan. Feel free to add your favorite seasonings and substitute your favorite veggies. Serve with a soluble fiber food foundation - oatmeal, cream of rice cereal, a toasted English muffin, grits, etc.
Makes 1 Serving, easily doubled or tripled
2 organic egg whites
1 teaspoon Tummy Fiber Acacia
2 tablespoons finely chopped sundried tomatoes
1 tablespoon finely shredded fresh basil
1 tablespoon finely diced onion
In a small bowl combine egg whites with Tummy Fiber and tomatoes, whisking until lightly frothy. Heat a small non-stick skillet over medium heat, and spray with cooking oil. Add egg mixture and immediately top with remaining ingredients, forming a narrow line of filling across the center of the omelet. When edges of the omelet are slightly crisp, carefully roll omelet up from one side with a rubber spatula to completely enclose filling, turn omelet over, and cook on other side for an additional 1-2 minutes. Serve immediately.
