Hi - It's always best to avoid dairy completely. I have been meaning to experiment with my bread machine and try to substitute powdered soy milk (they do make this) for the powdered dairy milk. I haven't had a chance to do this yet. Right now, I just omit the powdered milk the recipes call for.

In general, fat and lactose are the biggest triggers in dairy. But for a lot of IBS folks, the proteins like casein and whey are also triggers, even in small amounts. So they're much better off avoiding the stuff altogether.
