Hi - I have the cookbook, but haven't had the chance to try a single recipe (though they look great). A lot of them do have a high quantity of ground cashews, which would make them high fat, so you'd have to be careful. Finely grinding the nuts helps minimize the effects of the insoluble fiber, but it won't mitigate the fat content. But, many of the recipes are for items you would be eating in pretty small quantities along with a soluble fiber base. And there are also a fair number of tofu based recipes that don't use nuts.

I really need to start trying these recipes and see how they come out. They seem to be the only alternative to commercial soy/rice cheese products.
