Whoa! I would definitely not use real bacon....

It's just a huge trigger for so many people - way too much fat and pork of all kinds is really hard to digest. I'd use either fat free or low fat turkey bacon or a soy bacon, and sautee it in a nonstick skillet in a tablespoon of canola oil.

This soup sounds just delicious, Sharon - I think I'd serve it over white rice to up the soluble fiber level even higher. Do you think it could work with buttercup squash or sweet potato too? I really love squash and pumpkin!
