Hi there - oh dear! The bread shouldn't be bland or rubbery at all. Were the bananas totally black? If they're not they won't be sweet enough or banana-y enough in flavor.

When you add the dry ingredients together with the wet, mix just until the batter is incorporated. If you over mix this can give you a tough, rubbery end result. This is true for all quick breads - the overmixing affects the gluten, and gives a tough result.
