I have an old manual Donvier, and I love it.

You have to keep the metal inner canister in the freezer, and your freezer has to be cold enough. Stand alone freezers work much better for this than just the freezer side of an old fridge.

Takes about 30 minutes, and you crank it by hand every few minutes. Makes fabulous sorbets and soy ice creams.
