Hi - I'd guess that using Soy Garden would work better than the canola oil - I just don't usually have it on hand. I've found using the canola oil that I have to really rapidly whisk the liquid the whole time I'm pouring it onto the chex mix, to try and evenly cover things. Otherwise you will get a weird distribution. The Soy Garden will probably take care of this - if you try it let me know.
The fat content will be the same - canola oil is pure fat, and so is Soy Garden.
