I'm wondering if a bundt cake pan wouldn't work better for angel food cake from scratch. The cake mixes are much more stable (they've got stabilizers and some other commercial ingredients in there) and I think they're more fail-safe. Traditionally, there is a center wall in angel food cake pans to give the batter something to cling to as it rises. I don't know if a loaf pan will work when you're making this from scratch - has anyone tried it? I'm just worried that batter from scratch will be more temperamental. Sharon? What do you think?

Oh - and no matter what you do, don't grease the pan!
