Hi - the spice mix is meant to be put into a flat pan (or something like a pie plate) so you then have the shallow surface you need to coat the tuna steaks with the spices. You could use a bowl, it would just be trickier.

You're right about the missing toasted nuts instructions. If you can't find toasted sesame seeds, use regular white sesame seeds that are untoasted, and toast them yourself. Just sprinkle a shallow layer into a dry skillet (NOT nonstick) and heat over medium, stirring frequently, until the seeds are golden brown. This will happen pretty quickly.

I'm not sure how to sub for the orange juice concentrate. What you might do is take regular orange juice and simmer it in a small saucepan until it reduces and thickens. You might also stir some orange marmalade into a little orange juice to make it thicker and more concentrated.
