I have had disastrous results with replacing cream in caramel sauce recipes with soy milk. But those are "wet" caramel sauces - there are "dry" caramel sauces where you simply melt granulated sugar. That should be IBS safe. You might check epicurious.com for a recipe like this and see what you think.
