Hi - You can omit the cherries and not adjust the recipe and things will be fine. I'll tell you a little secret - the recipes for chocolate applesauce cake, peppermint fudge cake, and chocolate cherry poundcake are darn near the same exact cake. The flavoring, dried fruit, spices, and shape of baking pan vary, but other than that they're nearly identical. This is probably the most flexible cake recipe I've ever worked with. In fact, if you have the banana walnut cake recipe from a Heather Cooks show (go to the recipes section of the website and you can find it from there), that's also a variation of the same darn cake!
So, add or omit dried fruit, change the extracts, add or leave out ground spices, whatever your like. The texture is always going to be close to a poundcake in that it's very smooth and a little dense and very rich - it's not light like a sponge cake, and it's not at all crumbly like like some muffins.
