Hi - for the cabbage, that's whole cloves, as in the spice.

For the salmon, the numbers are right. There's a really high soluble fiber base to this meal from the wheat berries. What's kicking the fat level up is the salmon itself. You'll see that any salmon recipe, even with zero added oil, is always going to be at least 40% calories from fat because salmon is a fatty fish. What's really interesting is that it's a very tolerable food for IBS (as is tuna, another fatty fish). My guess here is that the omega oils in fatty fish, which are actually anti-inflammatories, have some pretty great health benefits to the gut. Also, even though the percentage of fat in salmon is high, the total calories overall is pretty low. A whole serving of salmon is only about 200 calories, with about 63 calories from fat. So, that's about a 40% ratio from fat, but in terms of actual fat quantity it's about 2 teaspoons, which is really reasonable for a whole meal. Especially with the soluble fiber you'd always be eating. Salmon is a bit like avocado in this regard - heart-healthy fats that are a high percentage of the food, but a pretty low total fat quantity overall.
