They are pretty much interchangeable. Bleached flour is just that - it's been bleached - so I avoid it because that's just not such a healthy thing. For fine baking (cakes and pastries and such) bleached flour can give better results, but it's pretty negligible. Unless you're making something like a wedding cake, I wouldn't bother. I just use unbleached for everything, and it works fine.
