Make in the bread loaf pan or as muffins (can also omit the glaze if you wish). Should be exactly what you're looking for. Shortbread cookies are nearly impossible to make safe. Their taste and texture come from butter - lots of it. The recipe posted for them on the boards is untested, and I really doubt it would come out anything at all like real shortbread.
