I wonder if Egg Beaters beat up into meringue the way regular egg whites do - my guess is they don't, though I could certainly be wrong. If this is the case, though, then a recipe might call for both so you could whip the egg whites into peaks, and then use Egg Beaters for what would normally be the amount of egg yolks called for.
