Re: soft peaks with egg whites       08/08/03 09:08 PM Edit Reply Quote Heather Reged: 12/09/02 Posts: 7799 Loc: Seattle, WA Hi - if your egg whites won't whip into peaks, the odds are there are traces of fat in there. Either a bit of yolk got into the whites, or you're using a plastic bowl that has traces of oil on it, or the beaters weren't 100% clean and had a bit of oil on them. You'll have an easier time with an electric hand mixer - start at low speed till the eggs are foamy, then switch to high speed.
