it's not just the acid in coffee, or the caffeine, it's some irritants that are just inherent in the beans. I don't know how anyone would remove all of that. Maybe they can - you could give it a try. One cup on an empty stomach would be a good test, but if it causes problems I'm not sure it's worth taking the chance.
Search the boards for posts on Teeccino and Soy Coffee and Rocamojo - these are all "herbal coffees" that are totally safe for IBS, and some hard-core coffee drinkers have really liked them. You might have to try all varieties, as they do differ, and folks have varying preferences. But I think the odds are good that one of them would do the trick - and not make you sick.
