Hi - I'd never thought of sourdough bread being acidic, but I think you're right. The lactobacilli in a sourdough culture produce a lot of lactic and acetic acids (which are what gives sourdough bread its flavor). If you have problems with sourdough, definitely avoid it and just use French or other plain white breads instead.

For the apples, I'd say the same thing. If granny smiths bother you because they're acidic, choose a mild red apple instead (I love Fuji). Defintely trust yourself and your own body with all of these things - if you think something is bothering you (especially since you know acidic foods are very problematic for you) then just avoid it to be safe.

For the soluble fiber, I'd guess you aren't taking enough. The dosage info is at web page

Make sure you're not using Metamucil or psyllium, which can cause gas. And any increase in gas from soluble fiber will definitely abate as your body adjusts. Lots of strong fennel tea can really help a lot here, too.

Insoluble fiber won't make things more solid - just the opposite, as it increases transit speed of matter in the colon and also increases the water content.
