Hi Claire - I will take you up on your offer if I'm back in France!

A whole baguette a day isn't necessarily too much, though it's probably an amount you'd eat throughout the whole day instead of at one sitting. What matters with the soluble fiber just as much as quantity is how you eat it. It needs to be the basis of all your meals and snacks, as it is the key to being able to eat insoluble fiber and some fat safely. Even if you have an enormous baguette for breakfast, that won't keep you stable through the entire day. It's much better to have a regular portion size of the bread for breakfast, more for lunch (or some other soluble fiber like rice, pasta, potatoes) and then the same for dinner. Snacking on a bit of soluble fiber foods throughout the day helps too. You don't need to stuff yourself - it's much better to have small portions frequently.
