Hi there - Britsarah has some good suggestions. I'd make sure that each snack/meal you eat has some carbs, though, for good health as well as good digestion. Proteins in and of themselves can be a bit constipating, so at the very least have a soluble fiber supplement if your meal doesn't have a lot of high soluble fiber foods.
I'd also concentrate on things like root veggies, brown rice, and oatmeal (if you can tolerate) and avoid or eliminate sugar. This will keep your soluble fiber up while your glycemic levels stay stable, and you'll avoid the empty calories in sugar.
Also watch your portions - it's easy to start eating more than you need just because you can finally eat without getting sick. And of course exercise, drink plenty of water, etc.
