Basically, you just increase until you're up to a dose that keeps you stable...

whatever that dose may be. Odds are it won't be your starting dose, as most people need to start slowly and increase gradually, until they reach the point of stability. That point may be, say, 8 grams a day, but they probably didn't start right out on that.

If you're stable where you are, stay there. If not, gradually increase a bit at a time until you feel that you're at a dose that's keeping your bowel function steady.

Fiber in general is good for you, and most Westerners don't get nearly enough in their diets, so an SFS can be an easy way to increase that amount. What you're aiming for is a minimum of total fiber of 35 grams per day (about 1/3 of that should be soluble). This will help keep everything from your colon to heart to your blood sugar levels healthy. But this is kind of a separate concern from what dose of an SFS will work best for your IBS. Find your own balance - that's all that matters!
