roasted chicken or turkey breast, tuna or crab salad made with fat free mayo, roasted veggies with a minimal amount of oil, smoked white fish or salmon with smidgen of soy cream cheese. You can probably safely add some very thin tomato slices and a few stemmed spinach leaves, or thin peeled cucumber rounds. Use white breads, and mustards or fat free salad dressings for flavor instead of full fat mayo.

Might also do a board search for sandwiches, with no time restrictions - I think this has come up before.
