Hi - your GI doc's comment about food staying in your stomach for weeks, building up, and then causing problems, is just too strange. This is a medical doctor who told you this?! Can you ask him to elaborate on this?
Try rice, almond, or oat milk if you don't like soy. Try root veggies like sweet potatoes, beets, rutabagas, turnips, parsnips, etc. For soluble fiber food foundations, you can eat corn cereals, corn meal, baked corn chips, rice noodles, all kinds of rice, potatoes, buckwheat noodles, tapioca, and more.
Check the recipe board for posts by Kandee (EYEBSER). She's got a wealth of info for going gluten free and being IBS safe, and there's no need for you to follow the really limited diet you're on. Hang in there...things should get better (and much tastier) for you soon.
