You can avoid gluten and still follow an IBS safe diet, you'll just have to choose gluten free soluble fiber staples. Gluten free breads can be tricky - if you buy them, read the ingredients to be sure they're not adding a lot of fat or dairy or other weird ingredients that can cause IBS problems.
