Hi Berky - refined sugar can affect triglycerides, so avoiding that will help. But soluble fiber helps, and that's going to be the "carbs". Can you get a referral to see a dietitian, preferably one who is proficient with vegan diets?
He doesn't need to go vegan, but a dietitian who can easily avoid red meat/dairy and is well versed in complex vs simple carbs, and soluble versus insoluble fiber, will have an easier time giving him suggestions that are compatible with IBS. You've already got the low fat down, so you really just need to find out how to go low carb (and I'd like the dietitian to second that, as typically low carb diets are inherently unhealthy) while keeping soluble fiber high.
