This is great! Have you had tests for a wheat allergy or for gluten intolerance? I'd just double check to make sure that they've done the gluten intolerance test - avoiding wheat is one thing, but if you need to avoid gluten too that would include a lot of other foods.
You can easily get your soluble fiber from rice, rice noodles, oats (if you're not gluten intolerant), barley, cornmeal/polenta, potatoes, root veggies, and some soy foods.
Don't laugh, but I would actually love to move to England. I've sort of looked into it a bit - I think it could be done. It's just so beautiful...maybe in a few years?
