I'd maybe add in egg whites - you can make scrambled egg or egg salad sandwiches with just the whites, and fat free mayo. Also cook red lentils - they disintegrate as you cook them, so there's little insoluble fiber, and they're a good source of both protein and soluble fiber. Red lentil soup is good - or make refried red lentils as a dip for baked corn chips or even a sandwich spread (Eating for IBS has recipes). Canned tuna and deli sliced chicken breast are good.
