I've grown peppermint, cilantro, basil, and dill. I bought all of them as little seedlings at Home Depot, chunked 'em into my outside garden, and they thrived on neglect after that. The more I picked them the better they grew.

Ginger is a root, so I'm not sure how easy that is to grow. It's also tropical. Peppermint likes much cooler weather - Oregon/Washington are the peppermint capitals of the world. Fennel needs hot and dry weather, like Egypt. Don't know about chamomile.

See if you can get a library book about growing indoor herbs in window boxes. I'd bet with a sunny window you could soon have a little peppermint farm going - and that stuff is so hardy it's considered a weed in a lot of places, so it will be tough to kill.
