For the curry, try soy milk - seriously! I've done this,

with a Thai yellow curry potato/chicken/green bean dish. I didn't really expect it to come out that well, but wanted to prove the point. I was shocked - it was fabulous - and I did not think the recipe tasted funny or like it was missing anything at all. I just used plain soy milk, didn't use the coconut extract at all, and it blended beautifully with the curry paste. I hadn't eaten a Thai curry in years, so it was a huge treat.
