Hi - if you keep it in a cool dry and dark place (that's why the package is foil, so it's opaque) it should stay fresh for several months. Whole seeds will stay fresher much longer than ground herbs or spices. Same with the peppermint leaf - I got a really large leaf size as it keeps the volatile oil content higher, so the quality of the herb degrades much more slowly.

I tried to package about a 1-2 month supply of the herbs, so that if you're using them everyday you'll go through the whole bag long before the herbs start to get old and less effective.

I honestly don't know about refrigerating it. But I'd guess that you could divide the package and leave half at room temp to use, and freeze the other half. Just make sure it's in an air-tight package.
