Hi - You can certainly use rice milk (and cheese, ice cream, etc.) instead of soy in any recipe. Almonds you'll just have to replace with pecans, walnuts, etc. depending on your preference.
As for tea - real tea, which is a specific plant, is not particularly helpful for IBS (though it does have a LOT of health benefits). What's great for IBS are herbal teas - and in this case "teas" is a misnomer. Herbal teas of most varieties don't contain any real tea leaves at all - they contain herbs. For IBS, peppermint, anise, fennel, caraway, chamomile, and ginger are particularly helpful. None of these herbs are in any way related to real tea.
If you buy tea bags, just check the ingredients to be sure that it's just peppermint or whatever other herbs in there. Even easier (and cheaper) is to buy the herbs in bulk and brew in tea strainers.
