For FiberChoice, you can definitely work up to 6 tablets a day. That's 12 grams, and that's great. You want a good 10-12 grams of soluble fiber each day. You can add soluble fiber foods on top of that. Just start gradually with any of the supplements and work up. Beware that Fiberchoice is much higher in fiber grams than other pills (four times higher, actually) so if you're switching over from Fibercon or Citrucel caplets you'll have to watch for that.
IBS folks don't necessarily need more soluble fiber in their diet than other people - they just suffer more severe consequences if they don't have enough. Most Americans don't even come close to the USRDA for fiber minimums. So I wouldn't exceed any of the dosage limitations on the soluble fiber supplements (especially Fiberchoice, which is actually marketed as a fiber supplement, as opposed to Fibercon or Citrucel, which are marketed as laxatives and so have label use warnings that aren't really true for soluble fiber).
