anyone make or eat seitan?

especially the smoked and flavored kinds. I've just used it as a meat sub in recipes. I've also had some veggie brand "barbecue meats" and such in sauce that use seitan, and have really liked them. Have never had any problems...

If you make this from scratch, post the recipe!

When I research seitan I find that it IS wheat gluten. All tests show that I am not gluten intolerant and so this would be a good source of protein for me since soy causes me big problems. Does it cause gas like soy does? I will look for it in my health foods store. Thanks.

There's a recipe on the wheat gluten package. Can't remember if it is Bob's Red Mill or Arrowhead or what.

I had "mock duck" seitan at a Vietnamese restaurant once. It was okay but there was way too much of it in the dish and it ruined it.

I've never made it, but I'm going to try. I had amazing seitan at the Candle Cafe in NYC -- great texture -- and I think I have a better chance of getting it again if I make it.
