Am new here and considering going vegetarian as meat really seems to trigger my symptoms. Can anyone give a long time carnivore much needed tips on switching to veggies? I do actually like pretty much all veggies, not a huge beet fan lol. Any help as to what I should avoid of make sure to include would be great.

I can usually make meat-eaters happy with veggie meals that have a smoky, meaty taste, and bacon substitutes work beautifully for that.

I use everything from Fakin' Bacon (which is smoked tempeh), Bacos or other brands of soy bacon bits, and Bacon Salt, which my local grocery store carries in the spice section. I also use a lot of smoked paprika, and for the smoky flavor with heat I use ground chipotle.

This is a super tip for adding smoky, meaty richness to soups, sauces, pastas, even sprinkling on veggie sandwiches.

I'd also go to the library and check out some veggie cookbooks for inspiration - there are some classics by Deborah Madison, Molly Katzen, and others you can flip through for ideas. Just sub soy/rice/nut products for dairy they use, and sub 2 egg whites for a whole egg.

Ethnic foods also tend to be very flavorful and easily vegetarian - anything Mexican, Vietnamese, Thai, etc. If you can get to an ethnic market play around with the sauces and seasonings they have - that can be a super easy and safe way to punch up just about anything.

i know what you mean about meat seeming to trigger your symptoms. i have pretty much cut it down to chicken breast and fish in terms of meat b/c everything else seems to hurt my stomach. I eat egg whites, beans (mashed or in bean burger form), nuts, and other things to get my protein.
i blog about my daily eating and you might find it helpful b/c i post a LOT of veggie options/recipes almost daily. I LOVE my veggies.
