Shrimp Substitution

Hello, I'm new here. I bought the Eating For IBS book about a month ago and I just love it. I feel so much better already.

I have a question. I don't really like shrimp, but many recipes that look great call for it. I've tried substituting chopped chicken breast with good results, but some recipes use fish sauce and such, and I think a fish might be better. What is a good substitute for shrimp?

Have you ever tried tofu?
How about scallops?

scallops are very good...and FAST to cook!
How about crab meat or even artificial crab?

I agree with Heather on the scallops!

You might also try halibut or crab or even "fake crab." (If you can get over the idea, and recognize that fake crab is not really like crab at all, then it's actually pretty tasty.)

When my daughter lived in Alaska and they had so much fresh halibut to eat that they actually got bored with it [GASP] she would make this stuff called "poor man's lobster." You cut up halibut into bite-size pieces, and boil it a few minutes in water containing a little salt and a lot of sugar. I don't remember the quantities but I would guess it's like a teaspoon of salt and a half cup of sugar per quart of water. Like fake crab, you have to get past the idea -- this is not really like lobster, but it's not like regular halibut either. I'll bet some other kind of white fish would work, too.
