Variation to Peppermint Fudge Cake?

My family and friends love this recipe of Heather's. In fact a vegetarian friend of mine won a bake off competition at her work with it. She said it's the most moist vegetarian friendly cake she's ever had.

I make it on a weekly basis and was wondering if I could vary it to make sort of a vanilla pound cake? I was wondering how it would taste if I left the cocoa out. Do you think I should add anything else?

Help me out here everyone, I'm great with savoury foods but not the best with sweets!

Have you tried using almond extract instead of the peppermint? Oh, yum.
I also love this recipe - I measure the dry and store it in Ziplocs in the pantry. That way, all I have to do is sift the contents into the wet ingredients.

Hi Kerrie - I've tried omitting the cocoa powder and have had good, but not great results. I made a version with lemon zest and some lemon juice that came out well. I tried a fancy raspberry rosewater version that was awful. The best luck I've had is with leaving the cocoa in, but changing the peppermint for something else.

One version that's great is to add the zest of a big orange, 1/4 cup of orange juice to the applesauce, and dissolve anywhere from 1 t to 1 T decaf instant coffee (depending on your tolerance) in the juice. Add 1 t of cinnamon to dry ingredients. This makes an orange cappucino flavored cake- very yummy!

I've also had great luck subbing the applesauce with pumpkin or ripe mashed bananas, omitting the mint and adding spices.

If anyone else has had luck with vanilla versions I'd love to know too.
