Fresh Tex-Mex Guacamole new

1 lg. ripe black-skinned California avocado (Hass)
1 small clove garlic, mashed to a paste with 1/4 teaspoon salt
1/4 cup finely diced white onion
1 tablespoon fresh lime juice
1 tablespoon finely chopped fresh cilantro
Optional seasoning: dash cumin, chili powder, or chipotle powder
Baked corn chips (Tostitos) for serving.

With a fork mash avocado to a smooth paste in serving bowl. Add remaining ingredients, including seasonings, if desired, and mix well.

Serve with baked corn cyips. Makes 3 servings. Recipe easily doubles.

I never bother to make this recipe any more. Ever since green Tabasco sauce came out, I just pour that into mashed avocados and it makes the best guacamole ever. It's not very "hot" at all, super fast and easy, and oh my goodness is it wonderful. Only problem is I'm going through gallons of green Tabasco...

The avocado should be about the same firmness as a ripe peach or nectarine (it gives in to pressure but isn't mushy to begin with) and shouldn't have any blemishes or bruises evident. Some people say they'll ripen in a paper bag if you get a hard one, but I don't think they taste as good.

When I went to school in TX, I used to make this all the time for parties:

2 (medium)avacados
2-3 T green tabasco sauce (to taste)(the secret! not spicy.)
1 T Garlic powder
1/2 lime (to taste)
1/2 finely chopped (medium) onion
1 finely chopped (medium-large) tomato
cilantro, chopped, to taste (the "chunks" taste good)
salt, ground white pepper, to taste

1. Mash Avacacado until creamy, but leave some chunks.
2. Add other ingredients... to taste <wink>. Determine which flavors you prefer to come out more, and adjust ingredients accordingly (lime, green sauce, etc.)
3. Serve with organic blue tortilla chips for some color

Geez, I don't even measure, I just keep shaking it in as I mash the avocado. It's a pretty generous amount - probably 1-2 tablespoons, maybe more? Just mash and taste as you go till it tastes right to you!

Good News: Whole Foods guacamole has a WONDERFUL taste... and is also low fat and 35 cal per 2 T. This is because they use avacadoes and peas as the base. And, it is super creamy and flavorful... and dairy free.

Shanna, Do you know what the percentage is of each? I miss avacados sooo much but have to limit them to VERY little.........because of the fat...

Gee, sure would like the recipe. I have the Whole foods cookbook so will look in it to see if they have such a thing...

Thank you Shana. Do they have this guac. pre-made at the store? There is a W.F. store about an hour and a half from me. But I found this on there website. Does this look similar to the W.F. gauc. you are talking about?

Guaca Salsa in my grocery produce section. It is all natural and it is really good. The only problem is I bought the zesty one and oh it is so spicy. I'm not used to guacamole tasting so spicy. It came with two 8 oz packages. I've never bought pre-made guacamole before but it cost less than buying avacados and the avacados look horrible. Not to mention that I would be able to buy more than I would have been able to make for far less.
