Hi - Here's the recipe for Corn Fritter Bread. The corn gets pretty well disintegrated by the time it's done baking. I'm trying to figure out a way to use creamed corn pureed instead. But if you can tolerate corn, this bread's for you!

Corn Fritter Bread
Large Loaf

1/3 c warm water
3 c white bread flour (I use Better For Bread)
1-1/2 tsp salt
1/4 c liquid butter buds
1/4 c honey
3/4 c can corn well drained
2 tbsp dried chives
1/4 c soy sour cream or soy yogurt
2 tsp fast rise yeast
O R
2-1/2 tsp active dry yeast

regular and rapid bake cycles okay

I used the FFree sour cream--can't find soy sour cream yet.
This loaf doesn't rise a whole lot. It's a stout, heavy, wonderful tasting bread.

Have fun.

I think you could use creamed corn here, but it would probably add more liquid than kernel corn. Maybe if you drained the creamed corn in a sieve for an hour or two first?

Trish - Butter Buds can be purchased as a sprinkle for putting directly on food or in packets in a box to mix w/hot water to replace oil or fat in a recipe. There's no fat in it so you can't use it for frying after you put it in water. It just dries up in the pan. I use it in my bread recipes in the bread machine instead of butter. It comes in a yellow box and is probably in the spice aisle. It's been so long since I've purchased it, I forget where they put it in the grocery store. Do you live in USA?

Trish - did you try health food stores and grocery stores or specialty stores? If not, you could probably substitute applesauce (unsweetened) or pureed prunes for the darker breads and cakes (like chocolate or banana). The baby food (Gerbers) works good and I've been thinking of just buying cooked prunes and pureeing them in my blender. Or maybe the dried prunes, rehydrating them and then put in blender. The quantity for substitution is the same as qty for original fat called for in the recipe. Hope this helps.
