Hi guys, I found an old muffin recipe book that I used to use all the time. It has heaps of recipes that would be IBS safe except for the fact that butter is included in some of the ingredients.
My question is how much applesauce would replace the butter?
Most of the recipes call for about 75-100g butter. I believe this is about 2 1/2 to 3 1/2 ounces.
If anyone can give me some ideas I will start kitchen testing them and then posting the recipes if they are successful.
Thanks, Kerrie

I'd substitute equal amounts of applesauce for the butter. But I'd replace a tablespoon or two with canola oil, so the muffins aren't totally fat free. They're likely to come out with a better texture and taste that way, they'll be more filling and flavorful, and they'll stay fresh longer too.
Best, H
