Okay everybody - I;m making Heather's German Potato Salad featured on her last newsletter via internet. I'll let you know if Dan pushes his plate away again!!!

Hi again - I made Heather's German Potato Salad for dinner and it was just great. My husband not only did not push his plate away, he also ate the Manwich I made him with soy ground round (he never knew--hee, hee!) He still doesn't know and I haven't told him.

The only thing that worried me about the potato salad was all the liquid (1 cup in all). It seemed like potato salad soup until I kept stirring it and the potatoes finally absorbed all the liquid. It was great. Now I can't wait until the warm weather so I can invite all my friends over to eat some non-fat great potato salad. Am I bad????

Hi - Hope this makes up for the Caribbean Black Bean Soup.

It is a lot of liquid - but I think because it all soaks into the potatoes it makes them very flavorful. I've been using that trick with regular potato salad too - I drizzle the hot potatoes with vinegar or pickle juice. Sounds odd, works great!

Heather - The Caribbean Black Bean Soup went bye-bye tonight!!! And, yes, the potato salad very muchly made up for it. I had some more tonight. I just put it in the microwave for about 30 second to take the chill off. It was great. I recommend it highly.

Oh wow.... I wish I would have seen this one for all the summer potlucks we went to!! Oh well.... I'm sure it would be wonderful anytime of year!!
