Heather - will the dry milk in bread recipes be okay to use for people with dairy triggers? A lot of my recipes for bread machine bread call for 1-2 tbsp of dry milk. Thanks.

Hi - It's always best to avoid dairy completely. I have been meaning to experiment with my bread machine and try to substitute powdered soy milk (they do make this) for the powdered dairy milk. I haven't had a chance to do this yet. Right now, I just omit the powdered milk the recipes call for.

In general, fat and lactose are the biggest triggers in dairy. But for a lot of IBS folks, the proteins like casein and whey are also triggers, even in small amounts. So they're much better off avoiding the stuff altogether.

I tried the powder soy milk in the bread maker and it turned out good. Unfortunatly, I was side tracked and didn't add enough flour. It was a little too moist, but my in-laws said it was great. I served it with your New England Clam Chowder. We all loved it and I gave the recipe to my sister and they also tried it. I guess it is becoming a family favorite.

Yes, the clam chowder is fantastic. Those of you who haven't tried that recipe yet are really missing out!

Heather - so I don't have to substitute anything for the dry milk, like equal amt of flour for the dry milk? I wonder why they call for dry milk anyway if the bread turns out okay w/o it? Any thoughts? Thx.

Torbetta - what recipe was it? I make bread all the time. In our "circle" I'm known as the BreadLady! Where did you get the powdered soy milk?

I used it in my classic white bread recipe. I have a Regal Kitchen Pro breadmaker. The powder soy milk is called Pure Soy Quik and it is made by ENER G. I have seen it in grocery store by the natural foods area. It comes in a 16 oz. box. Hope that helps. Ener-G foods, Inc.
