Hi everybody - here's a recipe from Electric Bread for Rice Pudding Bread. Haven't tried it, but it sure looks good and it has 2/3 cup cooked white rice in it.

lg loaf:
2/3 c lukewarm water
3 c white bread flour (I use "Better for Bread"
2/3 c cooked white rice, cooled to room temp
3/4 c sour cream (I use Naturally Yours fat free--the container looks like a Holstein Cow-- black and white)
2 tbsp brown sugar
1-1/2 tsp salt
1/2 tsp allspice ground
1-1/2 tsp cinnamon
1/2 c raisins (grind up or leave out)
1-1/2 tsp vanilla
2 tsp fast rise yeast
O R
3 tsp active dry yeast

Can use regular or rapid bake cycles
SPOON RICE INTO MEASURING CUP LIGHTLY WITHOUT PACKING

If anyone needs the small size loaf, let me know.

Per serving:
190 cal
5 mg chol
279 mg sodium
11% protein
73% carbo
16% fat (not if you use fat free/dairy free sour cream)

Happy cooking!
Sharon

Do you think it would work to substitute soy yogurt new

for the fat free sour cream? I've been experimenting with that in other recipes lately, with super results. But bread baking is always a bit tricky.

They do have soy and rice sour creams, but they tend to be high in fat even though they're dairy free. I've been taking plain soy yogurt (I like Silk) and draining it overnight in a paper towel lined sieve. This makes it thicken up and it's working beautifully to replace sour cream (and even a little cream cheese) in some baking recipes.

I need to try your rice pudding recipe with this trick in my bread maker....

Best,
Heather
