Have you thought about getting an ice cream maker? I received one for Christmas and so far, I love it. I requested it so I knew exactly what was going in my frozen desserts. (same reason I got my own breadmaker--so I controlled what was in there) I haven't made rice ice cream yet, but I definitely plan on it. For some reason, whenever I've consumed soy milk directly from the package, my throat itches. I can have it if it's been heated, such as in oatmeal, or in baked goods, etc., but just not cold. I still have yet to figure out this mystery.

So, that's why I want to try making my own rice ice cream. So far, I've made Peach Frozen Yogurt (for some reason, soy yogurt doesn't bother me either ) and Strawberry Sorbet. It was so easy & really good! I got the Cuisinart one that doesn't require salt. It's finished in about 1/2 hr.

I will let you know how my rice ice cream comes out. Now that the weather is getting warmer, I'm sure I'll be making it soon.

If you make a custard with your rice milk, thickening it over heat with some corn starch and maybe egg whites too, then make your ice cream from the cooled custard, it will have a really rich texture like high-fat ice cream. Yum!

Low Fat Peach Frozen Yogurt
From Cuisanart Automatic Frozen Yogurt-Ice Cream & Sorbet Maker Instruction & Recipe Booklet

Preparation: 5 - 10 minutes, 25-30 minutes chilling time; optional 2 hours to "ripen" in freezer.
Makes eight 1/2-cup servings.

1 can (14 oz) peaches packed in juice
2 cups lowfat vanilla yogurt
1/3 cup sugar

Drain peaches, reserving 1/3 cup of the juice. In a blender or food processor fitted with the metal blade, pulse to chop the peaches. Add the vanilla yogurt, sugar, and reserved peach juice. Process until smooth and the sugar is dissolved, about 1 minute. Turn the machine ON, pour peach/yogurt mixture into freezer bowl through ingredient spout and let mix until thickenend, about 25-30 minutes.

Nutrional analysis per serving:
Calories 111 (6% from fat)
carbo. 24g
pro 3g
fat 1g
sat. fat 0g
chol. 5mg
sod. 39mg

If you try it, let me know what you think. I really liked it...it's a nice "spur of the moment" recipe, since we usually have those ingredients on hand and yummy all wrapped into one.

Finally made the frozen yogurt. I didn't have any vanilla soy yogurt, did have regular, so I used blueberry and a little blackberry to make 8 oz. It tasted really good. I have rasberry soy yogurt, which I thought would go together, but I hate rasberries. I had a bad childhood experience that I just don't like them anymore.
