banana bread- where did I go wrong?

ok - can somebody help me out here. I just got done making the brown sugar banana bread. I was soo excited when I pulled it out of the oven so I took a bite. But it is kind of rubbery and bland???
I only wanted one loaf so I cut the ingredients exactly in half. I have made other versions of banana bread before and they have come out wonderful?
Any one else have problems with this recipe??
I'll slab some good spectrum butter on it and see if that helps.

Bethany, I don't know what went wrong, but here's an alternative banana bread recipe that works for me: Shanna's Banana Bread She said she has been eating it every day for over a year -- and I can understand why. It's FABULOUS! I've made it about a dozen times; I make it every week for hubby and myself. Shanna's right; it does taste good toasted with a little soy butter on it -- a GREAT breakfast! I always double the recipe so I never run out of it. It freezes well too (although it doesn't stay in the freezer for long!) I've made it with whole wheat flour AND with white flour, and it comes out just as good either way. I've tried it with nuts and without, and I prefer it without.
I didn't used to like banana bread until I found this recipe -- although I haven't tried any others to compare.

Thanks for the recipe. I will have to buy some more banana's tomorrow and try it out!! I will let you know how this recipe works for me.
Also - is expeller pressed canola oil safe? I know most oils aren't regardless. I've also read that palm, and virgin oil are best.

I'll tell ya something, I thought it was a little bland too! But I love spices, so I thought maybe it was just me...
I added a generous dose of cinnamon and nutmeg the second time I made it. FABULOUS!

Sorry Heather's bread didn't work out for you, Bethany. I think it's fantastic! I also love Shanna's bread that Bev is raving about. That one has areally unique flavor and texture, it's definitely worth giving a try. I have some in my kitchen right now!

Hi there - oh dear! The bread shouldn't be bland or rubbery at all. Were the bananas totally black? If they're not they won't be sweet enough or banana-y enough in flavor.
When you add the dry ingredients together with the wet, mix just until the batter is incorporated. If you over mix this can give you a tough, rubbery end result. This is true for all quick breads - the overmixing affects the gluten, and gives a tough result.

The Black Banana's may have been the culprit! The banana's I used were getting pretty brown, but not overly ripe. And I may have mixed the batter a little too much. Not sure. I will have to try it again with VERY ripe banana's.
I bet it is very good!

Heather's bread does come out awesome! She also has a recipe in EFI for French toast made with it - OMG!! It is so good. You should try it.

My praise for Shanna's banana bread came from years of experiencing banana bread that was not very good. As a result, I decided a long time ago I didn't like banana bread, and I never ate it. When I saw Shanna's recipe, I was looking for something to have for breakfasts (I hate cereal), and she said this is what she has every morning, toasted. I decided I would break my ban on the stuff and give this recipe a try. I was VERY pleasantly surprised, and haven't been able to get enough of it since.
I never tried any other recipe, including yours, Heather -- so I had no comparison. I should not have suggested any recipe over yours.
Heather, please accept my apologies. I have a big mouth.
