Lower Fat Oatmeal Molasses Cookies

Lower Fat Oatmeal Molasses Cookies
(Makes 25-30 cookies... I got 31!)

I can't believe these are low fat. They have a great consistency and flavor!

1/4 cup dairy-free margarine, softened
3/4 cup sugar
1/4 cup molasses
2 egg whites or 1/4 cup Egg Beaters
1 teaspoon vanilla extract
1 3/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup oats, uncooked
1 teaspoon cinnamon
1/2 teaspoon ground ginger

1. Cream margarine; gradually add sugar, beating at medium speed of an electric mixer until well blended.
2. Add molasses, egg whites and vanilla; beat well.
3. Combine flour and next 5 ingredients in a medium bowl, stirring mixture well.
4. Gradually add flour mixture to creamed mixture, mixing well to combine.
5. Drop dough by level tablespoonfuls, 2 inches apart, onto cookie sheets coated with cooking spray.
6. Bake at 350 for 12-13 minutes or until very lightly browned.
7. Cool slightly on cookie sheets.
8. Remove from cookie sheets and cool completely on wire racks.

Molasses cookies remind my of my grandmother. I love them. Thanks for the recipe. I know we will have to make them soon.

I just made these last night. Too wonderful, although I think I cooked them for a bit too long. Are they supposed to be just on the edge of crunchy - or are they supposed to be cruncy? All in all they taste great. Couldn't wait to sample one! Thanks.

I'm glad you liked them djw! They came out pretty crunchy for me too, more than I expected... but they were still nice and chewy in the middle. I bet they would be a little chewier if you cooked them a minute or two less.

Okay, wait a minute here ... I thought the recipe in the Feb. newsletter and this one were the same recipe?

So how do I get them crunchy if I don't want them chewy? I just bake them longer? How much longer? I want CRUNCH!

Lol, Bev, you're so funny. I baked mine for the 12-13 minutes and they were just starting to get crunchy, so maybe if you let them get a little brownier they'll be even crunchier??

Can you buy spectrum at regular grocerie stores? Or is that one you get at a health food store? What ones are the best to use?

Steph, Heather turned me on to Soy Garden, and I'm so grateful. It's HEAVENLY! The best thing about it is that it's non-hydrogenated, it's a healthy margarine. Okay, so it's still 100% fat, and ya still gotta use it sparingly, but it's SOOOO yummy and tastes like real butter more than any other I've ever tasted.

It's also delightful to cook with. I love the stuff.

You have to get it at the health food store, though, so when we drive down there I stock up. Give it a try!
