I made some last week and I've almost finished of the first loaf. The second I put in my fridge, but I'm thinking I need to freeze it. Is it going to freeze well now that it's a few days old and has been sitting in my fridge? It was wrapped up well.

This recipe is very yummy. It does remind me a little of the peppermint cake. Really moist and delicious!!!

Thanks for your help!

Hi - it freezes beautifully. Wrap tightly in clingly plastic wrap, then put the whole thing in a big ziploc freezer bag. It can freeze for months. Just thaw at room temp and you're ready to go.

It reminds you of the peppermint fudge cake because the pep cake is a variation on the original recipe - the applesauce cake.
