Chocolate Cinnamon Flan

4 cups rice milk or soy
1/4 cup unsweetened cocoa powder
1 tsp ground cinnamon
1 cup sugar
3 tbsp water
4 lrg eggs ( use egg sustitute )
1 tsp vanilla

Place six 4 oz custard cups in a baking dish.
In a large saucepan mix milk,cocoa, cinnamon, and 1/4 cup of sugar. Bring to a boil over medium heat. Cook stirring often for 20 to 25 minutes or until reduced to about 2 cups.
let cool slightly. Preheat oven to 350 degrees. In a meduim saucepan mix water and remaining 3/4 cup of sugar. Stir over medium-high heat for 1 minute, or until sugar is dissolved.
Cover and boil, and cook 2 to 3 minutes or until thick.
Uncover and reduce heat to medium, and cook without stirring for 2 minutes or until syrup is darken to amber color. Immediately pour syrup into custard cups and swirl to coat bottoms and halfway up the sides.
Whisk eggs in a large bowl and slowly add milk mixture. Whisk in vanilla and them strain mixture through a sieve and pour into custard cups. Fill the baking dish with 1/2 of warm water and cover with foil. Bake for 30 to 40 minutes or until custard is set.
Remove pan from oven carefully and remove cups from pan. Let cool on a rack for 15 minutes then refrigerate for 1 hour.
Makes 6 servings.

Seems like a lot of work but if your in the mood for a delicious desert of mexican culture, it's worth it.

This is a KEEPER Sherr! Oh how I love Flan, but when we go to Mexico I don't eat it because of the milk and eggs........Now I can pig out BEFORE we go and I won't miss it.

I LOVE flan!!! Thank you soooooo much!! AAAAAAAAAHHHHHHHH!!!!!!! lol in Georgia we had this awesome Mexican restaurant that served the best flan EVER and I miss it. Maybe this will be just as good!

Hum?? right know I could use a shoulder of someone who understnads about IBS.. My Dr. finally said I have it and my hunny is going eat food and don't worry about the IBS.
The Dr. wants me to start Paxil and I'm very skeptical..
Feel like having a great baskin robbins banana royal..

Maybe you could ask your Dr to consider another medication within the same class that doesn't have as many side effects. It isn't any fun to get the diagnosis, but I'd suggest staying away from the ice cream. My sweet tooth seems to stay pretty satisfied on this diet and the rice dream ice cream is really good. Sorry you are having a bad day.

Don't do it! You REALLY don't want that Baskin-Robbins. I KNOW you don't. Instead, go down to the health food store and get yourself some Soy Dream mocha fudge frozen dessert. OOOOh, BABY! I just got some today, and I'm not sharing with ANYONE. Don's gonna have to pig out on saltines -- the mocha fudge is MINE.

OOHH!! but it sounds so good. I can't bring myself to the pain. I bought whole soy vanilla bean ice cream, but haven't tried it yet. I can't decided if I like the soy ice cream yet. Dr. wants me on a low dose of paxil 10mg. says it won't cause as many side effects.

I'll supply the shoulder you supply the flan (OK?) and then we can to to 31 flavors, right? (Just kidding, but you DO have to gain some weight, don't you?) So if you can, do the soy or rice ice cream and put some yummy (low fat) topping on it and some fake whipped cream and curl up with a good movie....

I feel so badly that you are having a hard time of it right now, BUT when you posted your test results you have no idea how happy I was for you that you got a clean bill (especially on the thyroid!) so maybe, just maybe, don't fight the Paxil right now,,,,give it a try.....who knows you may, as a side affect, end up so happy you'll recommend we meet half way at Cabazon outlet mall and spend our brains out!!!

Just a thought from a crazy person....

Have you thought of Zoloft instead of Paxil? I know my sister in law and my niece both took it because it had less side effects and was less habit forming.

If you like rice milk better there is the rice dream line of ice cream. Also, tofutti makes some make soy ice cream sandwiches.

I have found that their Lemon Ice and Margarita Ice contain no dairy and are very IBS-safe. So go ahead and have Baskin Robbins - just as long as it is not regular ice cream.

I have had that daquiri one it's mint green in color and did ok.I have to look for the other. My kids love to go tp baskin robbins.

It does contain starch. Those who are whole-wheat sensitive shouldn't have a problem, though.

Ok Heather what is the sugar count in it.I just had my hubby get me some Choc.soymilk an it is so good////but then I look at the sugar count an there are 21 g.of sugar for every 8 oz.I,m so sorry I had my glasses on to see that.

Gerry, I don't know if this is okay for you. Aren't you diabetic?

Funny you should ask -- because I was eating the stuff as I was reading your post! (I'm SOOOO addicted!)

Okay, it says on the container under "total carbohydrate" 13g. sugars -- that's per serving, and the serving size is 70g. That seems a bit high, doesn't it? I never check the sugar content on stuff, so I don't know.

You don't want this stuff. It's dog poop.

Gerry, don't read these posts. It's all about sugar stuff, and you don't want it. I'm so sorry about your diabetes -- my grandmother had it, and I know how she craved sweets so! My heart goes out to you.

How about thinking of other stuff, like maybe frozen soy pizza? Can you have that? I love that. AND -- no dog poop!

Gerry, you're in Las Vegas. That's a big city. Certainly you have health food stores there. Have you looked in the Yellow Pages under "Health Food" or "Nutritional Centers"? You know, that would be a good place for a diabetic. I was at our local health food store the other day, and I saw lots of good stuff that was sugar-free.

Check those Yellow Pages again, Girlfriend!

We have lots of health food stores.but most of them just sell tea an things like that.an some of the sugar free aren,t so good for people with IBS d.because they make you go more an I sure don,t need that.my hubby the other day was being nice to me an got me some sugar free choc,oh it was so good an I made a pig out of myself.yes you guess it I got a good book an sat all day.Gerry.

We have JUST GOT to help you out here. My hubby is diabetic but doesn't crave sweets. Make me happy, then I have them all for myself!!!!!

Anyway, how does sugar alcohol affect you? I have some Xylitol sitting in front of me and it says Ideal for Diabetics, glycemic index of 7, 75% less carbs than sugar...ya-da-ya-da-ya-da.....Ever tried it?
Know you can't use manitol, it would give anyone "D", but don't know about this stuff that tastes just like sugar to me and you use the same amount in a recipe that you do of sugar....

Is there's a brand called stevia for diabetics it's very sweet to taste and you don't need much of it to sweentened things up. You could use your sugar substitute, since I did get this from a diabetic cooking book. Here's another brand of sugar for diabetics. Diabetisweet and it's aspartame,sacchrine,sucrose,fructose,sorbitol free. You can also buy it in brown sugar. You can buy it at stores like Kmart, target, sav-on, Whole foods or finer food stores.
