Heather's Pumpkin Apple Spice Bread...gluten free version!

I'm so new on this whole site that I haven't had time to look and see how many of you have trouble with gluten or actually have Celiac Disease. For those of you who have to avoid it, I thought I'd share the adjustments I made to this DELICIOUS recipe from Heather's book. Wow! I shared one loaf with my family (they don't have CD), but labeled the other for myself (it's harder to have food on hand for the one person with CD!). Their loaf was GONE in 2 hours!
I substituted the white flour with a GF mix that I often keep made up on the pantry shelf (it's from GF cookbook author Bette Hagman). The mix is 6c. white rice flour, 2c. potato flour, 1c. tapioca flour. Mix these well and store in a container like any other flour. It can sub for white flour in most any recipe.
I almost always add a tsp. of either guar gum or xanthan gum to bread recipes (GF foods don't hold together well, and this helps). I actually forgot it in this recipe, but it was so moist it didn't matter!
Finally, I added a snack-size applesauce in with the moist ingredients (those are 4 oz). GF breads are a bit dry...this worked great. Oh- and I didn't have Granny Smith apples on hand so I used Gala. Absolutely delicious. Thank you, Heather!!!

There are a number of people on the boards with IBS and gluten intolerances so they'll love this recipe.

Just FYI, if you use the Tummy Fiber, you can use that in place of the guar gum.
